This week has been the week that my house was overrun by courgettes!
Seriously... The professor's veggie garden is producing stuff faster than we can eat it!
Carrots, onions, baby tomatoes, cucumbers but especially courgettes... I'm throwing them into everything and this week I even made Zucchini bread for the first time just to use more of them. I'm seriously going to develop nightmares about trying to use up all of that vegetable.
That said, the taste is so negligible it can go in pretty much everything. It just adds bulk. ๐คท
Maybe I just need to learn how to blanch and freeze them.
In other news... I don't have any. This week was much the same as last week.
I'm tentatively starting a new project but I don't really want to go into it yet in case I run out of steam and I abandon it, lol. If it grows legs, I'll share. ๐
I'm still not reading much but I managed to listen to an entire audiobook (start to finish) this week. For a lot of you, that isn't special or strange but since I usually listen to one or two a month, max, it's awesome.

I listened to this a couple years ago and I hated the narrator's attempt at a Scottish accent so much I abandoned the audio boxset at book two.
I don't know why I decided to give it another shot beyond it suited my mood and this time around it was much more enjoyable. Not because the attempted Scottish accent wasn't as hideous as I remembered (it
really was) but I think because I'm much better at listening to audiobooks nowadays and ignoring irritations like that.

My favorite thing to make with zucchini is to shred it and add it to ground chicken. Making chicken patties and frying them. Then dip them in a avocado dip.

DeleteOoo I may have to try Mary's recipe. We have a noodle spiralizer to make zucchini noodles which then you can use a variety of sauces. I didn't grow zucchini but I'm going to have lots of tomatoes soon. I listen to an audiobook every 1-2 days so I have really integrated it into my daily life. But it took time to do that.

DeleteZucchini is one of my favorite veggies, so I am jealous. My daughter would eat it, so I learned to make it many ways. She does even more with it. Yum! I didn't put in for the ARC of the next Liese book, but I hope to read it at some point. I loved the first book, and am looking forward to getting to know the rest of the family better.

DeleteI used to make quantities of courgette and ginger chutney when we had a glut, which I used to give away as Christmas pressies. DeleteI haven't had a garden since the 70s, but I still have fond memories of all the zucchini and tomatoes, and using them in everything I made.

ReplyDeleteThis is it! Cheesy Taco Stuffed Zucchini Boats. Only if you eat meat or use a meat alternative. It was pretty good the first day but we always have leftovers. It was even better the second day.

DeleteI really miss having a vegetable garden! We didn't have time to get one setup when we moved here, and then everything with the coronavirus... ugh. My grandfather has always kept a garden, so I've been living vicariously through him. I've been drooling at the thought of fresh tomatoes and cucumbers. ;)

Oh yeah, the tomatoes are coming... Last summer was horrific with tomatoes, lol. They all ripened super late and I had to make sauces, soups etc and fill the freezer so we didn't waste them.

DeleteI hate dreadful attempts at our accent and I'm sure people from both parts of Ireland, as well as Wales and parts of England feel the pain too! I read one of Hall's books about the girls-can't remember which one but it was a good read. Bad narration is a reason why I'm not keen to try audio books!
ReplyDeleteThe accent thing drives me bonkers. The narrator for this is American and fails miserably at Scottish, Irish, and English accents (they all come up throughout the series). I'm just waiting for her to murder Welsh! lol
DeleteScottish accents by non Scottish people can be horrific, I’m thinking Whiskey Galore bad, maybe Mel Gibson in Braveheart!! They can sound really funny!

That's one thing I don't have a problem with... My kid loves veggies. Always has. Except mushrooms. I have no idea why he has such a problem with those. *shrugs*
DeleteI use zucchini a lot to bulk up meals .. everything from burgers to spaghetti, Zuchinni, cheese and bacon slice makes for easy breakfast or lunch too.

They're zucchini's. In the UK, we call them courgettes. Don't know why! lol
DeleteI was today years old when I heard the word courgette. LOL Had no idea it was another name for zucchini! :) Zucchini is one of my favorite veggies. (One of our favorite diners in rotation lately is buffalo chicken stuffed zucchini - so yummy.) I find a botched accent so distracting. It’s hard to get past it.
